Did a git clone.
Let pandoc travel the tree and transform every tex found in to rst.

created index.rst myself
created some subdirs, moved some files in it (dir and file structure has
to match document structure).
Added first level titles here and there.
Only some chapters.
Sphinx build gives around 170 errors.
I guess it would need 2 or 3 days work to get it perfect, if your
current work does not grow exponentially.
There is plenty more room for more advanced scripting maybe even up to
fully automated conversion.
Or you do it once and switch to write in rst directly.
Hosted on read-the-docs you get good PDF and ePub and they publish fully
automated directly out of your own git, no need for a new workflow.
